Pesto is a sauce from the Liguria region of Italy, famous for its flavour and versatility in countless recipes. Its name comes from the Italian verb 'pestare,' meaning to crush, as it was traditionally made by grinding ingredients in a mortar. The classic version, pesto alla genovese, dates back to the 19th century and combines fresh basil, garlic, pine nuts, Parmesan or Pecorino cheese, and olive oil. However, its roots go back to similar sauces like 'moretum,' a blend of herbs and garlic from Ancient Rome.

The red pesto version is made with red-coloured vegetables, depending on the chef’s preference; we’ve chosen concentrated tomato and red pepper as the base, giving it its distinctive colour and a sweeter, smoky flavour. These ingredients are blended with olive oil, garlic, basil, and cheese to maintain the creamy, rich essence of the sauce. Some recipes may include spices or nuts for extra flavour profiles, but we’ve opted to leave out tree nuts, making our sauce more suitable for people with allergies. Our red pesto is nut-free.
