Well
I bought it mainly for gluten-free recipes (it adds flexibility to the dough) and for some cosmetic formulation that requires it. The gel formation is fairly quick and easy. I have not noticed any particular taste but I am not very sybarite. I quite liked it, I think it is a useful and versatile ingredient.

Multipurpose
A very good option to thicken and give texture in times of low caloric intake and increase the satiety level of liquid foods. It gives a slight flavor to the food very mild and tolerable. The only drawback I find is that the powder is very fine and sticks to any wet dish, so just in contact with the skin makes your fingers sticky.
