An excellent product, compared to guar gum, you have to be more cautious with the amounts of xanthan because it continues to thicken after mixing, for baking I would not use it at more than 0.5% of the liquid of the recipe, because if you do it at 0.75% or 1% as the guar at the end you run the risk that the dough does not rise, although at 1% to make soufflé type recipes (pancakes, mugs etc) I think the result is better with this xanthan (and if you let the mixture stand 5 minutes before cooking better) the result is more homogeneous. In my case it does not produce the gases that the guar does, although I do notice that it has a more laxative effect than guar.
